Let me be clear: I am not a meal prep girly. I can’t eat the same container of chicken and broccoli every day without losing my will to live. I crave variety, fresh elements, and meals that feel fun — not like a chore. But here’s the thing: I do need some level of preparation in my life, because the idea of cooking a full meal from scratch every night? Who has time for that?

Enter Prepped-ish. This is my low-commitment approach to meal prep: just enough to make life easier, but not so much that you’re locked into boring leftovers all week. It’s not about perfection or planning everything to the letter. It’s about having a few basics in the fridge and ready to go. Now you can throw together meals that feel fresh, fast, and delicious.

So what is Prepped-ish? Each Friday, I’ll prep the following:

  • A Protein: Think roast chicken, crispy tofu, or smoky grilled shrimp.

  • A Starch: rice, or roasted potatoes, or whatever carb is calling my name.

  • Prepped Veggies: Washed greens, trimmed broccoli, or something that can easily be thrown into an air-fryer.

  • Something Extra: Pickled onions, toasted nuts, fresh herbs salad, something crunchy.

  • A Dressing or A Sauce: Because the secret to good food is always in the sauce.

With these basics prepped and ready, I’ve got the foundation to make meals that work for me — whether it’s a hearty rice bowl, a colorful salad, or a plate of roasted goodness with a drizzle of something zippy.
