Squash Soup
A creamy, cozy classic with a spicy kick—aka the soup my mom made on repeat (and yes, it’s that good).
This is a soup my mom made all the time when I was growing up, and it’s pure comfort in a bowl. I’m pretty sure this is adapted from an Emeril recipe, but over the years, it’s taken on a life of its own. The Parmesan rind trick is my little upgrade—it melts into the broth, adding a nutty, savory depth that makes this soup even better. Hope you love it as much as I do! 💛
Roasted Butternut Squash & Sausage Soup
Ingredients
1 large butternut squash (about 3 lbs), halved, seeds removed
2 tbsp vegetable oil, divided
½ lb sweet or hot Italian sausage, casings removed (I used hot)
1 large onion, chopped
6 cloves garlic, minced
1 tbsp fresh sage, chopped
6 cups chicken stock
1 tsp lemon juice
½ cup heavy cream, or more to taste
Kosher Salt & Freshly ground black pepper, to taste
Instructions
Roast the Squash:
Preheat oven to 400°F (200°C).
Lightly coat squash halves with 1 tsp oil. Season with salt & pepper.
Place cut-side down on a parchment-lined baking sheet and roast for 45 minutes, until tender.
Let cool, then scoop out the flesh and set aside. Discard the peel.
Cook the Sausage & Aromatics:
In a large pot over medium-high heat, heat the remaining 1 tbsp oil.
Add sausage, breaking it up with a spoon. Cook until browned, about 4 minutes.
Stir in onion and cook until soft and caramelized, about 6 minutes.
Add garlic & sage and cook for 1 minute, until fragrant.
Simmer the Soup:
Add roasted squash & chicken stock, stirring to combine.
Bring to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally.
Blend & Finish:
Use an immersion blender (or work in batches with a blender) to puree the soup until smooth.
Stir in lemon juice & heavy cream. Taste and adjust seasoning as needed.
Serve:
Ladle into bowls and enjoy! Optionally, drizzle with more cream or garnish with fresh herbs.
Pro Tip: For extra depth of flavor, toss a Parmesan rind into the stock while the soup simmers. It melts into the broth, adding a rich, nutty umami that takes this soup to the next level. Just remember to fish it out before blending! 🧀✨
