Hi hi hiiii and welcome to Week 20 of Prepped-ish — I can barely believe we’ve made it this far, mostly because I’ve been surviving on martinis and vibes lately. The weather’s been gray and gross, and my focus is non-existent because in T-minus one day I will be in the presence of Beyoncé Giselle Knowles-Carter. Like, how am I supposed to think about dinner when my soul is preparing to ascend?
But alas, a girl’s gotta eat. And this week, I found myself craving comfort — the kind that tastes like home. My dad was born in the Caribbean, and while I love Caribbean food with my whole heart (and stomach), it’s not always the most weeknight-friendly. A lot of those flavors take time — slow simmers, deep seasonings, love layered over hours. And while we don’t have that kind of time right now (Beyoncé!!!), I tried to bring that warmth and soul into some more doable dishes for the week.
So this week’s menu is giving: cozy, nostalgic, easy-ish, and maybe a little island-kissed. Thank you for being here, for cooking with me, and for letting me ramble about martinis and my queen Bey.
