Prepped Ish Week 19
Menu: Chinese Chicken Salad, Ginger-Garlic Turkey Lettuce Wraps, Spicy Peanut Noodle Bowl
So first things first: are the Celtics actively trying to ruin my nervous system or is that just how playoff basketball works?? Because every game has me pacing like I’m waiting on a job interview and a pregnancy test at the same time. Just pure chaos.
Anyway—how was last week? What did you love? Were there any things that didn’t quite hit? I’m always curious what you’re vibing with and what you’d rather never see in a prep list again.
This week’s menu is full of crispy-fresh, low-lift dinners that let you coast through the week with minimal mental energy and max crunch factor. We’re doing:
🥗 Chinese Chicken Salad (cool, crunchy, and really hard to mess up)
🥬 Garlic-Ginger Turkey Lettuce Wraps (flavor-packed + fridge-friendly)
🍜 Spicy Peanut Noodle Bowl (aka your new go-to for noodle cravings)
We're keeping it oven-free and heatwave-friendly—because I love a roasted veggie as much as the next person, but I will not be baking myself alive in May.
Quick pulse check:
How do we feel about curries in the summer? Too cozy? Or still in the rotation if we keep it light and coconutty?
And how aggressively are we avoiding the oven right now? Do you want full no-cook girl dinners or are you open to a little roasting if it’s worth it?
Let me know—I live for your feedback. And as always, do a little prep on Sunday and your future weeknight self will want to kiss you (or at least high five you over the sink).
