Prepped Ish Week 18
Menu: Ground Beef & Black Bean Quesadilla, Mexican Caesar with Blackened Chicken, Loaded Mexican Spiced Potato Bowl
First of all — thank you, as always, for being here. Whether you’ve been following along from the start or you’re jumping in this week, I appreciate you more than cheese appreciates being melted.

This week we’re heading south of the border — kinda. We’re doing Mexican-inspired comfort food that hits that sweet spot between cozy, customizable, and very “what’s already in my fridge.”

🥔 Dinner 3: Loaded Spiced Potato Bowl with Leftover Beef & All the Fixings
Each dish shares ingredients, cuts down on waste, and lets you remix leftovers like a pro. Because we're not just cooking — we're strategizing.
Oh, and one last thing:
The Celtics being down 2–0 was not on my bingo card. At all. I am genuinely considering fleeing NYC until this series is over. LOL but also maybe not lol.
